Guest Post: R J Theodore Gives Away an Old Family Secret

Everybody’s tried to make a meal they mess up. A pile of perfectly good ingredients that just won’t come together into something palatable despite our best efforts. And when time and money and supplies are tight, sometimes tossing out the pot and starting over is not an option.

In each act of my new spacepunk steam opera novel, FLOTSAM, the four-person airship crew sits down to a meal. They come together to eat, to debate, and to problem solve. Their thoughts in these scenes are filled with worry over finding work, getting paid, keeping the ship in good repair, and staying out of trouble long enough to spend any money left after that.

Each meal is a backdrop to what’s going on in the story at that moment: an easy, familiar meal to celebrate getting away from a confrontation in one piece; a load of their favorite takeout as distraction from unpleasant news; and, finally, a dinner that goes horribly wrong before coming together in the end.

FLOTSAM‘s Captain Talis is as reckless in the galley as she is in life. When the crew members normally in charge of cooking are otherwise engaged in higher priority duties, Talis volunteers herself to fix them something to eat. She fumbles her way through dinner preparation until the engineer discovers her at work on an over-salted, unpalatable meal and firmly ejects her from the galley. When the captain later tastes the food she’s amazed that it has transformed into a rich, balanced, and flavorful chowder.

Even in secondary world fiction there is research to be done. During one revision pass of FLOTSAM, I double-checked a piece of cooking advice I picked up somewhere: that you can add a starchy vegetable to the pot to draw in excess salt. This proved to not be the case, as an oversalted meal needs not one starchy vegetable or even a pile of starchy vegetables, but rather an increase in every other flavor and ingredient in the meal to balance itself out. There are no magic bullets or miracle treatments.

The disastrous meal was a critical component of the final act. The situation that limited their menu options, the botched attempt to make something of it, and the meal’s subsequent salvation were deliberately crafted and I was reluctant to fudge the details.

I turned to my friend, a classically trained chef and cookbook writer, in the hopes they could give my scene a pass of plausibility as I described it. When I was told that there’s no easy fix, I felt lost. Frustrated. This big important scene became implausible and people would stop reading, throwing the book across the room because I stretched credulity well past its breaking point.

My friend reminded me, “It’s Science Fiction and a different planet; who’s to say they don’t have a fix?”

It is a different planet. It is a different reality. I’ve knocked it down and built it up so many times over and over in different ways, there wasn’t any reason why the rules of cooking couldn’t also be knocked down and rebuilt.

I rolled up my sleeves, thought about the oversalted dinner and the rules of the world and the characters who abided by them, and finished the scene with only minimal adjustments.

In FLOTSAM‘s final draft, the ship’s engineer brandishes a jar of something she calls “an old family secret” and chases the captain from the galley. The draft saved the amusing interactions between characters along with the parallel between the meal and the situation aboard the airship. And along with the dinner’s saltiness went my own self-conscious over-explanation. My characters gathered in the next scene over a hearty meal and hoped, despite everything they’d been through, things just might turn out okay.

And now that dish might be my favorite meal in the novel.

  • Women, PoC, LGBT, or other wise disadvantaged creators in the history of gaming, ranging from very early times up to the present day.
  • F&SF volunteer efforts you work with

Length is 500 words on up, but if you’ve got something stretching beyond 1500 words, you might consider splitting it up into a series.

When submitting the approved piece, please paste the text of the piece into the email. Please include 1-3 images, including a headshot or other representation of you, that can be used with the piece and a 100-150 word bio that includes a pointer to your website and social media presences. (You’re welcome to include other related links.)

Or, if video is more your thing, let me know if you’d like to do a 10-15 minute videochat for my YouTube channel. I’m happy to handle filming and adding subtitles, so if you want a video without that hassle, this is a reasonable way to get one created. ???? 5 stories, 5 times

Have you ever wondered how your favorite story would sound if written by another author? What is it exactly, that makes writers different? What does each one bring to the story they’re writing, in terms of style, mood, tone, etc? How would the story sound as written by someone else?

That’s what the Reading 5X5 anthology explores – twenty-five SFF writers writing five variants of five stories. I asked five groups of five authors to start from the same basic story brief, but write in their own way. The result is fascinating – five wildly different approaches to each of the five briefs, but each telling, at its core, the same story.

Where did this come from?

In 2013, I read Retrospective: the Best of Gene Wolfe, in which he encourages writers to pick a story by a successful author, rewrite it from scratch, and analyze the differences. I liked the idea, but never got around to actually doing it.

In 2015, I participated in my first Novel-in-a-Day, in which each author writes one chapter of a novel, based on just a few shared facts and plot elements. There are usually multiple versions of each chapter, and it’s always interesting to read another author’s take on ‘your’ chapter.

From those two seeds, Reading 5X5 arose in mid-2017. What if comparing and contrasting different authors’ takes on the same material was the focus of the effort, rather than a bonus? What if it were an anthology, with several groups of authors taking on the same stories?

Between 2013 and 2017, it just happened that I had started an online SFF magazine, Metaphorosis. By the time I’d come up with the anthology idea, we’d been publishing for almost two years. That meant I had a ready-made pool of authors whose work I knew I liked. I sent out a query, which said, essentially – “Here’s a fun idea. Are you interested? And by the way, let’s do it for charity, so please give me your work for free.” I’m happy to say that a lot of people said yes, because that’s just how Metaphorosis authors are.

Around the same time, I’d come up with the Reading 5X5 title, which gave me the size of the anthology. We had so much interest that we signed up alternates, in case someone needed to drop out. In fact, no one did (the one down side being that I didn’t get to step into the gaps myself.)

So, how did it all work out?

I’m extraordinarily pleased. The stories are fascinating to read and to compare. Some groups ended up reasonably similar (in theme, but not in detail), while others were strikingly different. Some authors stuck close to the brief; others (even those who wrote the briefs) veered off in unexpected directions. No matter what, though, the stories in each group are recognizably the same story at their core, while being creatively, inventively different in most other ways.

Not only that, but it was fun to do.The whole endeavour was collaborative. Writers volunteered to write the story briefs, they took on the proofreading, and they participated in promotion. I enjoyed it, and I think the writers did too.

What about the actual book?

From the start, I wanted the anthology to work for two groups – readers (people like my spouse, who just want to read good stories and can’t be bothered with all the trim) and writers (who want to really dig in and see how and why the stories differ, and how they would have handled the brief). True to that goal, we’ve produced two editions of the book.

  • The Readers’ edition – just 25 great stories from five story seeds.
  • The Writers’ edition – all 25 stories, plus two extras, plus the original story briefs, plus extensive author’s notes for each story and by the writer of each brief. My recommendation is that writers who really want to make the most of the book start with the briefs, and write their own story from one or more of them before reading the anthology. You can probably tell I’m rooting for the Writers’ edition. The stories are great in themselves, and I hope a lot of people will enjoy them. But the Writers’ edition is where the real fun is, in my mind. It’s not only interesting in itself – seeing the genesis and the thought process of each author – but it’s a ready-made writing exercise that authors can try on their own, with their critique groups, or, via the website, with strangers. And did I mention it’s for charity? All proceeds go to the Clayton Memorial Medical Fund, providing for critical medical expenses of SFF writers in the Pacific Northwest (where Metaphorosis is based).

Guest Post: The Belfast Bar's Beer-Battered Cod from The Big Cinch by Kathy L. Brown

In the prohibition-era, supernatural noir novel, The Big Cinch, Sean Joye, a young veteran of 1922’s Irish Civil War, has made his way to his brother’s place in the United States and into the employ of an ambitious judge. The courthouse charwoman, Mrs. MacSweeney, decides he’s just the person to rid the place of some troublesome haunts that only she can see. She shows up at Sean’s brother’s pub to convince him to do his duty.

Mrs. Mac’s Ghost Problem

Mrs. Mac’s whiskey seemed to take effect and she tucked into her dinner like a starving person. “I’m a God-fearing, Christian woman. I’ve never been a drinker. I marched with the temperance ladies. I’ve no truck with the devil or his wiles. But the new courts building is cursed. I’ve felt it since we moved in. And it’s getting worse. The vile things are bolder every day.”

“But why do you think I can help you with ghosts?”

She considered her words.

I waited, anointing my fish with malt vinegar. We batter the cod here, as Grandmother Joye did. No soggy breadcrumbs. Makes all the difference.

“I say “˜get thee behind me, Satan.’ But I was cursed with a bit of the Sight, I suppose,” she said at last. “”˜Twas worse when I was a girl. But when you came outta the lobby this morning, I could see their mark on you. They’ve claimed you as one of their own.”

One way or the other, the fae are responsible for humans with the Sight””a knack for seeing the unseen and knowing the unknown””and we recognize each other. Perhaps outright, or maybe just an attraction to a kindred spirit. But in those days, I refused to look at many things I could plainly see.

“Do you want pie? I want pie.” I half stood and waved at Maud. “Is there apple?”

Mrs. Mac sopped up the grease on her plate with a bit of bread and popped it into her mouth. “No one believes me. I’ve about been sacked for warning folks.”

“What can I do?” I had a thought. “Shall I find you a priest?”

She about choked on her Bevo. “The Church of Rome has no answer here, boy.” She looked pleased though, as Maud brought warm pie with cheddar cheese. “No offense. I know it’s the way you was raised and you don’t know no better.”

“None taken.” I agreed to coffee at Maud’s suggestion and the child poured it for the two of us. “So, not saying you are right or wrong about me and what I might see or feel or know”””

“I want them to leave me alone. To go back to Hell and leave me be. Seeing as you know them, I thought you could tell the haunts that.”

I couldn’t deny I’d run smack dab into the Veil before. But I didn’t need this bother right now. I didn’t want it. “I’m sorry,” I said. “I just don’t see how I can help you.”

Her faded blue eyes turned bright with anger. She gripped her fork like a weapon. “”˜Tis a shame you’re marked for damnation.”

Grandmother Joye’s Beer-Battered Cod

Sometimes people use cornmeal or even breadcrumbs to prepare fried fish. But, according to Sean, that would be wrong.

  • 2 pounds fresh or frozen Icelandic cod (If frozen, unthaw completely.)
  • Salt and pepper to season fish
  • 1 ½ cups flour, plus more for dredging the fish
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon dried dill
  • 1 egg, beaten
  • 12 oz Smithwick’s Ale (Or any mild ale or lager. Grandmother doesn’t like the effect of high heat on stouts or IPA.)
  • Melted lard or shortening or vegetable oil
  • Malt vinegar, lemon wedges, and tartar sauce as desired

Pat fish fillets dry and cut into individual portions. Lightly salt and pepper them, then dredge in the flour.

Thoroughly mix 1 ½ cups of flour, baking powder, salt, and dill together with a fork.

Stir in the beaten egg and enough beer to make a thin, pancake-like batter.

Submerge each piece of dredged fish in the batter briefly, then set aside for a few minutes while oil heats. (This is messy work. Take care the fish fillets don’t fall apart)

Using a heavy skillet, melt the cooking fat to a depth of ¼ to ½ inches. Heat at moderately high heat until shimmery. Test the oil temperature with a spoonful of the batter. If it cooks up to a golden-brown dollop in about 60 seconds, the oil is ready for the fish.

Avoid crowding the pieces in the pan. Cook on each side about 3-4 minutes (depending on thickness of fillet) until golden brown. Grandmother didn’t have an instant read thermometer, but the fish would have an internal temperature of 145 degrees F.

Serve hot with malt vinegar, lemon wedges, or tartar sauce. Fried potatoes (chips) are the traditional side dish.
